Turmeric Tofu Scramble


 Ingredients: 
●       1 package firm tofu (about 1 – 1 ¼ pound), drained, crumbled 
●       1 teaspoon turmeric powder 
●       Freshly ground pepper to taste 
●       1 teaspoon fine sea salt 
●       1 tablespoon grapeseed oil 
●       ½ teaspoon cayenne pepper 
●       4 tablespoons nutritional yeast (optional) 
●       Freshly ground pepper to taste 
●       4 tablespoons non-dairy milk of your choice 
●       2 cups baby spinach 
●       Cherry tomatoes to serve 
●       Any other vegetables of your choice to serve Method: Mix together in a bowl, tofu, turmeric, nutritional yeast, seasoning and milk and mix well.  Place a large nonstick pan over medium high heat. Add oil. When the oil is heated, add the tofu mixture and cook for 4-5 minutes.  Stir a couple of times while it is cooking.  Stir in the spinach and cover the pan. Remove from heat after 3-4 minutes. Stir and serve with cherry tomatoes and any other vegetables of your choice.
