Buttered Veggie-Egg


Serves: 4 Ingredients: 8 Eggs 8 Slices of Virginia ham Butter 4 Scallions (chopped) 8 Mushrooms (chopped) 4 Tablespoons of Sour cream Method: 
• Sauté scallions and mushrooms in butter until they are soft 
• Add sour cream to the veggies and cook on medium heat until thickened 
• Use butter to coat muffin and line it with Virginia ham
• Put 1 tablespoon of mushroom mixture on the ham and break egg on the mixture 
• At 350 F bake for 15 minutes Calories: 305g, fat: 16.2g, carbs 8.5g, Protein 31.5g
